MacFixit posted an article with several solutions to the problem. Force quit is a great way to deal with a frozen application. The problem with leaving an app frozen, of course, is that it usually will slow everything else down, using lots of system resources doing nothing.
When force quit doesn’t work, tho… what to do? the article describes in detail several ways to do it, the short version being to use Activity Monitor, Terminal, or at worst, a forced shutdown.
More interesting to me are the preventative measures. If an app freezes, look first at preference files. They, or another resource, has likely become corrupted.
Again, the article goes into detail with several ways to delete these resources. Rather than rehash them here, go to MacFixIt to read it all, including the comments. Some may be a bit technical, but are a lot of great suggestions in them.
